Our recipe video for the tomato mozzarella casserole on toast has been published a long time ago. However, the recipe was previously missing from the blog. Since this video is now booming during Advent, it's time we made the recipe available to you here too. At first I was surprised that the video recipe was such a hit, especially at Christmas time. However, when I think about the fact that Advent is the time when you pile up a lot of calories by baking cookies and stollen, then a light and simple recipe like this casserole is just the thing for a quick lunch or dinner.

Most tomato mozzarella casserole recipes we know use pasta as an ingredient. However, we tried out a new version that we really like. Try it with toast instead of pasta.

 

Recipe for the tomato mozzarella casserole on toast

This is what you need for the tomato mozzarella casserole:

Ingredients for the tomato mozzarella casserole

  • two onions
  • two gloves of garlic
  • 125 ml good olive oil
  • Butter for the mold
  • 3 slices of toasted bread
  • 800 g of tomatoes
  • 2 packs of mozzarella
  • Pepper and salt to taste

Preparation for the tomato mozzarella casserole

Chop onions and garlic cloves small.

Mix the onion and garlic mixture with olive oil until it forms a paste.

Brush an ovenproof dish with butter.

Spread the toasted slices of bread on the bottom of the pan.

Now spread half of the onion and garlic mixture on top.

Then cut the tomatoes into slices about 5 mm thick and spread half of them on the toast base. Then salt the tomatoes.

Cut the mozzarella cheese into slices and spread half of it on the tomato layer.

Repeat with another layer of tomatoes and mozzarella.

Now season the remaining onion and garlic mixture with freshly ground pepper and distribute it over the casserole.

Then bake the casserole for about 30 minutes in the oven preheated to 220° C. Enjoy our casserole. It's perfect for summer as well as a light lunch or dinner in winter.
