Cooking techniques with the Dutch Oven

When cooking with a Dutch oven, the right heat distribution is crucial. For baked goods such as bread or cakes, place more coals on the lid than under the pot. This way, the heat is evenly supplied from above. For stews or braised dishes, focus on the coals under the Dutch oven to heat the food evenly from below.

You can estimate the temperature without a thermometer. A simple rule of thumb: For about 180 degrees Celsius, place 2 coals per 2,5 cm (1 inch) diameter on the lid and 1 per 2,5 cm under the Dutch oven. A hand test also helps. Hold your hand about 15 cm above the coals. If you can hold it there for about 5 seconds, you have a moderate heat.

After cooking, it is important to take care of the Dutch oven. Let it cool down before cleaning it with warm water and a brush. Do not use soap to preserve the protective patina. Dry the Dutch oven thoroughly and rub it with a little oil to prevent rust. This will keep it ready for use for a long time.
