The wines grown on the primary rock of the Lower Main River are lively and delicate. In contrast, they taste earthy and elegant when grown on the Muschelkalk in and around Würzburg. Finally, the wines from the Gipskeuper (Gypsum Keuper) of the Steigerwald have a fruity flavor. The red wines from the red sandstone soils of the Mainviereck region are both lush and full-bodied.

Meanwhile, we learn how the prince-bishops of Würzburg profited from the wine trade. They used their wealth to build their city. In the wine shop of the State Court Cellar, we can get a sense of the great influence of these church princes.

Because the ecclesiastical lords were unpopular, they preferred to live in the Marien Fortress, located outside the city walls on the hill above the city. There they were safe from the population of their city.

"Würzburg residents come here when they're in town shopping," Dorothea explains. "Then they get a glass of wine from the bar. They sit in the room and meet up with friends for a chat."

There aren't any fine wines here, but you're always likely to bump into people you know. We sit down on green-painted wooden benches and sample the house wine. You can buy a glass of it at the bar for between €2,70 and €3,20 per glass, depending on the variety.

Right next door is the wine shop of the Bürgerspital (Citizens' Hospital), which has existed since 1316. It was initiated as a charitable foundation for the poor by Johannes and Mergardis von Steren. It was intended to provide aid to the city's starving and sick residents. However, to receive one's daily portion of wine in Würzburg, one had to follow strict rules.

If one didn't comply with the regulations, water was mixed into the wine or the wine ration was cut. Nevertheless, the Bürgerspital is now a place for seniors, where the strictness of the authorities has given way to pleasure and well-being. Old and young alike enjoy meeting in the Bürgerspital's courtyard to spend a day in pleasant surroundings.

The sign "Weinstube Maulaffenbäck" tells a story of a Würzburg tradition that is slowly dying out. The initiator of this foundation was the Würzburg Prince-Bishop Julius Echter von Mespelbrunn (1545–1617). He simply purchased the Judengarten (Jewish Garden) outside the city and designated it as a building site. To this day, the proceeds from the foundation's vineyard contribute to the financing of the clinic and the senior citizens' home.
